Product Development, Food Safety In-Person Training in Dubuque for Food Entrepreneurs

AMES, Iowa -- Food entrepreneurs who want to take their new products to the next level may register for a new, in-person course made available by Iowa State University Extension and Outreach. The one-and-a-half-day course is set for March 8-9 in Dubuque.

Refrigeration safety gauge displaying safe food temperature by The Toidi/stock.adobe.com.ISU Extension and Outreach has acquired the curriculum from the University of Massachusetts, said Shannon Coleman, associate professor in food science and human nutrition and a human sciences extension specialist at Iowa State. Coleman’s research team has partnered with Convivium Urban Farm’s Community Kitchen in Dubuque to bring this curriculum to emerging and current food entrepreneurs in Iowa. This course is a one-and-a-half-day program designed specifically with lectures and interactive activities. Participants will expand their knowledge of product development and labeling, as well as preventative controls and foodborne hazards of food products.

“We will introduce the food science basics, discuss important considerations when developing a new food product, share key elements required for product labeling, and provide an overview of key regulatory requirements for small and emerging food businesses, such as entrepreneurs and local food processors,” said Coleman.

Dates and topics

  • March 8, 8 a.m. - 5 p.m. CST: Day one topics include course introduction, food safety hazards, product development lifecycle, controlling food quality and safety, and product labeling and claims.
  • March 9, 8 a.m. - 12 p.m. CST: Day two topics include food safety management, hazard analysis and preventative controls.
